#FlavorfulFriday - Chocolate Chia Protein Pudding

Happy Friday! Here in Pennsylvania we are getting all prepped for the big snow storm that is schedule to hit us later on tonight! I went and stocked up on my favorite red wine the other day and what goes better with red wine than chocolate? I figure if the power goes out at least I don’t need to heat up wine or chocolate pudding 🙂

This is a super simple, almost “instant pudding” recipe that will crush any chocolate craving you have!

Ingredients:

  • 1 1/4 cup unsweetened vanilla almond milk (I love Califia farms since it doesn’t have carrageegan and is only 40 calories)
  • 3 TBSP Chia Seeds
  • 4-5 Medjool Dates (I used 4, but if you want it sweeter you can add more)
  • 3 TBSP Cocoa Powder (less if you don’t want it too chocolatey)
  • 1/2 tsp Vanilla Extract
  • 1 Scoop Vegan Protein Powder (Everlast VP is my fav vegan protein! Get an insider’s discount with my code: HEALTHYFITANDBAREFOOT)
  • Pinch of pink Himalayan sea salt

Directions:

  1. Put all ingredients into the blender (add a little more milk if it’s too thick)
  2. Separate into containers (I portioned them into 1/2 cup prep bowls)
  3. Store in fridge for at least an hour before enjoying, so it thickens up and gets colder.
  4. Enjoy on it’s own or with your fav toppings. I put blueberries and shredded coconut on mine. You could add bananas and walnuts or goji berries! (Get 15% of my fav brand of Goji Berries, Chia Seeds & Cocoa Powder)

    Oh, nice sounding recipe! I’m not a *huge* fan of dates, but I know they use it to help out with healthy chocolate things. There is one company in particular I know will put it in their granola bars a lot (forget the brand off the top of my head bah).

    Still, seems like a fun recipe to try. Did you come up with it yourself? It seems like a fun desert to play around a bit with ingredients wise. Kinda makes me want to be like, oh what about this? Let’s throw that in.

      Thanks! I put this recipe together after I got a few ideas of how other people were making chia pudding, so you could use raw honey instead of dates, I’m just not sure the amount you would need. I love dates for natural sweetness and even just as a snack or pre-workout carb 🙂 I make my own hemp protein bars too which use dates…it’s easier to keep them together with dates. I think AMRAP bars use dates.

      You could definitely play around with the ingredients…I think some recipes just put chia seeds in milk with other ingredients and put it in the fridge overnight to get it more like a “tapioca” pudding instead of blending it. I was impatient and didn’t want to do that option lol Play around with it and let me know what you come up with!
