I don’t know about you, but I love sweet potatoes, especially sweet potato fries baked with olive oil, cinnamon, nutmeg, and cardamom!
My husband isn’t a big fan of sweet potatoes except for when I make them like this recipe I will share with you. I’ve come to realize that my husband will eat almost anything as long as I season it properly and make it taste yummy. I’m not as picky as he is and I can eat pretty much anything, but he won’t eat something if he doesn’t like it. So…when I’m making food for us I always need to make sure that it’s basically “kid-approved” for my husband. lol
If you’ve never made baked sweet potato fries, I definitely recommend making them! I got this awesome french fry cutter from Pampered Chef which makes it much easier too! I cut the ends off the sweet potato then cut them in half to make using the french fry cutter easier. It’s a great arm workout too!
Once the sweet potatoes are all cut up, I put them in a Ziploc baggie, toss some Olive Oil on them, sprinkle with cinnamon, nutmeg and cardamom. Then shake, shake, shake it all up so it’s all coated.
Then I lay them out flat on my baking stone, pop in the oven at 375 for 25 minutes.
Once they are done I add a little touch of sweetness to my husbands fries using yummy, low glycemic and very nutritious Coconut Nectar.
