My husband and I make 4 steaks at a time on the grill and then eat the leftovers throughout the week. Cook Once – Eat Twice! We even do this with chicken as well. I know some people don’t really care for leftovers, but they save time throughout the week and are a quick meal to have especially when you don’t know what to cook or are short on time.
I cut up the leftover steak we had and made a yummy baked pizza for myself and steak quesadillas for my husband.
For both recipes I took a sprouted Ezekiel tortilla and spread some chunky blue cheese on it and placed it on a baking sheet. For my pizza I just then topped it with sauteed onions, arugula, bacon and steak. Oh and I topped it with some hot sauce, because who doesn’t love blue cheese and hot sauce on a pizza?!
For my husbands quesadilla I added the sauteed onions, mozzarella cheese, and the steak (no greens for him). Then I put a little more blue cheese on the top sprouted tortilla to try and make it stick together (that part didn’t work out so well).
Pop both in the oven at 375 for about 10-15 minutes.
The top tortilla on the quesadilla didn’t stick very well to the bottom piece, but my husband didn’t mind and said it was really delicious. He even ate two of these! lol So, it was a dinnertime WIN!
These recipes are so customizable too! Don’t have steak, use chicken, or just use leftover roasted veggies (one of my favorite recipes). Use pizza sauce or garlic and olive oil instead of blue cheese.
