Flavorful Friday: Baked Cinnamon Acorn Squash with Greek Yogurt, Raw Honey & Walnuts

I probably spend at least 24 hours a week on Pinterest! I’m definitely addicted, but the good news is that I’m constantly finding and trying new, tasty & healthy recipes! I recently became in love with making recipes from scratch and trying new foods. Last year I lost 35 lbs and did a total detox and learned what foods I can eat that don’t make me gain weight, and which foods do. I also learned that its so much fun making my own healthy recipes at home. I enjoy the food so much more when I make it myself instead of just buying it at the store. Sounds silly, but it’s true. I’ve also been sharing my healthy homemade food items with friends and family and it’s a wonderful feeling when they tell me that I’m motivating them to eat healthier and make their own foods at home.

Acorn squash is my new food item I’ve been intrigued with lately. The first time I made anything with Acorn squash I made these really yummy Acorn Squash “French Fries” with a spicy Sriracha Greek Yogurt dipping sauce. YUM!

So, when I was at the store I picked up another Acorn squash and then came home and browsed Pinterest to find a recipe that I could make for my husband and myself.

That’s when I found the blog www.ambitiouskitchen.com, which is loaded with yummy clean eating recipes like this Baked Acorn Squash with Greek Yogurt.

This is what they look like when they come out of the oven. I added nutmeg to mine in addition to the cinnamon and coconut oil.

I added Greek Yogurt that I buy from a local dairy, topped with raw honey and chopped walnuts.

My husband and I each ate one half of the squash for lunch. It wasn’t quite filling enough for my husband, but he enjoyed it. That’s always a plus in my book!

Now, it’s time to browse Pinterest again for a healthy recipe for dinner tonight 🙂
