Happy Friday my healthy friends! It’s apple harvest season right now, so grocery stores are loaded full of so many different varieties of apples. I only buy organic apples (apples are one of the most heavily pesticide sprayed fruits), so that selection doesn’t have quite as much variety, but they are delicious and healthy! I usually buy Fuji or Gala organic apples.

I have seen these floating around on Pinterest and just had to try it as an afternoon snack. I love apples because they are a grab-n-go kind of item that I can keep in my purse when I’m out doing appointments, but since I’m working from home all day today I thought getting fancy with an apple sounded like a fun idea and I’m glad I did!
These little “cookies” are just sliced apples, topped with a nut butter of your choice, then any toppings you like. I went with unsweetened almond butter, unsweetened coconut flakes, hemp seeds, walnuts, cinnamon, and a few dark chocolate pieces.

So yummy! These would be a fun treat to let kids top themselves and be creative with their choices.
