I love snacking! I feel better when I snack. I definitely can’t go without eating anything for too long of a period of time and I NEVER forget to eat. LOL You could say I think about food all the time. I love to eat, but I also love the way I feel when I eat smaller meals throughout the day. I plan my day around food so to say…for example if I know I’m not going to be home for a lengthy period of time I will make sure to bring healthy snacks/smoothies, etc with me so I don’t get Hangry. My family thinks I eat a lot, but I really don’t eat more than they do…I just eat more often.
I recently read an article on the Orange Chef website about snacking and how it’s actually very beneficial for your metabolism, blood sugar, and weight. This is great news, because I’m definitely a “snacker”! Speaking of healthy snacking, I recently found this awesome recipe for 5 Ingredient Blender Muffins on the Happy Healthy Mama blog.
I just made a batch of these blender muffins quickly this morning because I needed something quick, healthy and portable to take with me while I’m out and about.
There are so many different ways you can make these muffins too and you will see on Happy Healthy Mama’s blog the various options you can choose from. This morning I did organic crunchy peanut butter, maple syrup, cinnamon and topped with walnuts and dark chocolate chips. So yummy!
The first time I made these muffins I wanted to play around with various nut butters, sweeteners and toppings. These are the three variations I came up with and I must say that the Almond Butter, Maple Syrup and Raspberry one was delicious!
Peanut Butter, Coconut Nectar, dark chocolate chips, Walnuts
Sunbutter, Raw Honey, dark chocolate chips
Almond Butter, Maple Syrup & Raspberries
